I think we'd pretty well all understand if you varied the number of episodes according to availability of time and content...
Having observed busy people previously (usually from a safe distance), I think we can be very thankful for what we do get (for free) without having unreasonable expectations :D
Yep I love the seasons and breaks approach too. I think it helps in keeping me engaged vs some newsletters which i get every week/two weeks/ etc and they start to become wall paper (even when i know the content is interesting and useful).

During breaks you get to thoughtfully map out the upcoming topics rather than scramble to find something to post for the sake of posting. (I hate that feeling - hence I've been super inconsistent with mine.)
